I use two narrow tins for this recipe, mostly because I like the shape. &lt;br /&gt;&lt;br /&gt;As for the mixer, it is possible to make this without one, it just requires a lot of stirring a sticky mass of dough by hand. I&amp;#39;ve made breads like this in the past without one, but now that I own a mixer, I&amp;#39;ll never go back. &lt;br /&gt;&lt;br /&gt;Peppered brioche sounds wonderful. Every thing we do must be written down in our lab book.  When we leave, the original stays with the lab and the worker gets to take a copy.  I had no idea restaurants were so much like the science industry.
