Condimentaholism

I am a condimentaholoic. An addict. Tragically hooked. No meal is safe from a sauce or spread or sprinkle or dip. I've got something for every food and it's reaching the point of obsession.

I smear dijon on my roasted chicken, dip duck into plum sauce, and toss steamed green beans in vinegar. I've got mint jelly for lamb, horseradish cream for beef, and tartare for fish. I can't imagine tonkatsu without bulldog sauce, nor fries without ketchup, nor a Thai curry without fish sauce. Condiments pepper my pantry in bottles and jars and pots and bags, outnumbering nearly everything else combined. An entire shelf in my fridge is dedicated to them – mango chutney next to hoisin just in front of sambal somewhere near the mayonnaise over by the gherkin relish. I could create an entire section for those I have made myself, herding together the blood orange marmalade, the pickled cherries, the fig chutney, and more. I own flavored vinegars, preserved lemons, smoked salts, and spice mixes, all vying for space with the poor flour and sugar. Each has a purpose, and each is loved dearly.

However, one condiment is undisputedly king; I reach for that bottle more often than any other by a factor of ten. Hot sauce. Fiery, tangy, salty, sweet, I toss it on pastas and eggs and sandwiches and stews.

A small mountain.

I, of course, have preferences as to what kind of hot sauce I use. Unfortunately for me, the only vinegary hot sauce generally on offer in Australia is Tabasco – passable, but nothing earth shattering. What I really want is a sauce that will add spice to my meal, but is not unbearably hot, is quite vinegary, and possess some of the sweetness of a good, fresh chili. My poor parents are going broke shipping boxes of my favorite brand to me from the states.

Keeping my parents' financial well-being in mind, and considering I burn through litres of the stuff annually, I figured I might consider learning how to make my own hot sauce.

Yay!

Roasting a few of the chilies adds the slightest smoky hint to this sauce. Upon tasting the finished product I was surprised at how sweet it is when it first hits the palate, but this quickly gives way to a wonderfully balanced spiciness.

500g cayenne peppers, stems removed
500ml distilled white vinegar
1 clove garlic
1 Tbsp sea salt flakes

Roast five of the cayenne chillies over a flame, blistering and blackening their skin all over. Cool them and remove the blackened skin. Combine these with the rest of the chilies, garlic, salt, and vinegar and blend until smooth.

Store in a jar for 3 weeks. Strain the hot sauce into jars and seal. (And make some extra room in your pantry.)

Silly, I know.

If someone was to ask you which one of your senses you use the most, which one would it be? Taste,Sight,Hearing,Touch,or Smell? If I was to take a wild guess, I believe you thrive off your sense of taste, but after looking at the wonderful art you create, one would automatically assume sight. Even, smell since it is closely tied to taste and your obsession over food.

Lee- I'm storing my hot sauce in the cupboard, as it is technically pickled. However, since I didn't cook the chilies (as some recipes call for) this has never been heat treated, so you might want to keep it cold if you are at all worried.

Sara- My 2 year old would eat dijon with a spoon if I let him and insists on a drip of hot sauce whenever I have it at the dinner table. Seems to me you and yours are normal. :)

Wow. I never thought so many people were obsessed with hot sauces. Of course, the one my mom makes is the best in all the lands. I have been raised on all kinds of hot spicy condiments, but, unlike you, I hardly ever use a condiment. SHOCK! Unless it's ranch. Don't judge. I'll definitely have to try this one out for sure.

There are few places around that sell Frank's, Fire Works Foods in Sydney and USAFoods in Melbourne. Aswell, there are a few sauce makers in Australia.
When I first arrived in Australia I could not find Texas Pete and it seemed most of the sauces I did find had a tomato base. I just wanted peppers and vinegar! After 5 years of people asking when the next batch would be ready, I started making enough to do the markets around Melbourne.
I would run your recipe through a tomato mill instead of a strainer.

A couple of bandmates and I swear by hot sauce as a "bringer of rock" when consumed before a show. If you're ever in the San Francisco, bring some homemade sauce, come to a show, and it will be guzzled on-stage with relish (that is, with appreciation, not another condiment). I feel that the human element in its production might add a special kick.

I am a condimentaholic also! Just ask my family...... There is never any food in our large GE fridge. It's full of condiments...and a few dairy necessities like sour cream, mascarpone, milk, single cream, double cream, and buttermilk!

As a caribbean, I do enjoy hot sauce (or pepper sauce as we call it) with almost everything! I truly enjoy this recipe as it is so versatille. Although I enjoy the taste, I have never learned how to make it from scratch. Thank you!!!!!

I thought I was the only one! People always stare in amazement at my abundant use of condiments. I grew up with hearing comments like these constantly (and still do): "Would you like some french fries with your ketchup?" Love my condiments. So sloppy...but so worth it, kinda like life, right?

Asian grocery stores offer a wide assortment of hot sauces. I'm sure there plenty there in Australia? Be wary of the ones with fish in it though.
